I have to admit that I wasn’t a big fan of avocados until the last couple of years. That is when I fully realized the potential of this awesome fruit (yes it’s considered a fruit – it even has a seed you can plant) that normally we treat as a vegetable. Avocados can be a wonderful addition to your diet and a great source of “good” fats. They are also rich in vitamins such as K, B9, C, and E. Plus, from a single avocado you normally consume about 11 grams of fiber, which is close to half of the daily recommended intake.
When I began creating an avocado infused recipe for the sandwich round of the Avocados from Mexico competition I found myself thinking of non-traditional uses. For a long time most people have been happy with the fact that avocados are only used in guacamole or occasionally using it sliced or diced on top of a taco salad. I have found that avocados can add a rich creaminess to several types of savory dishes. Throughout my culinary journey I have found that you can use an avocado in place of an egg or cream in some dishes. When creating the following recipe, I found that avocados go perfectly in a grilled cheese sandwich.
2 Avocado From Mexico (avocado flesh diced into 1/4 inch pieces)
6 strips of bacon chopped in to 1/4 inch pieces
1 cup shredded aged cheddar cheese
1 cup pepper jack
1/4 cup queso fresco
1 teaspoon crushed garlic
1 teaspoon shallots
1 finely diced fresh jalapeño
2 campari tomato
1 teaspoon sea salt
1/2 teaspoon fresh cracked pepper
2 Mexican style bolillos (Mexican style baguette)
2 tablespoons melted Irish Butter
2 tablespoons Avocado oil
Panini Press or Sandwich maker
In a bowl mix together avocado, cheese, diced bacon, garlic, shallots, jalapeño, salt, pepper, and tomato until incorporated without mashing. Melt butter and mix with avocado oil. Cut bolillos in half and brush all sides with butter & oil mixture. Fill each half of bread with Avocados from Mexico mixture. Combine halves and grill on panini press until golden brown.
